Store raw animal products by cooking temperature: produce and ready-to-eat foods on top, raw seafood next, whole cuts of beef and pork, ground beef and pork, and poultry on the bottom. A black substance is present on the ice chute in the ice bin. Dump the ice, wash, rinse and sanitize the ice bin and the bottom of the ice head. The prepared and raw animal products in the walk-in cooler that are out of the original packaging are not date marked. There are unlabeled food containers throughout the kitchen. There is uncovered food in most of the cooling units. The cooks are wearing wiping cloths. Keep wiping cloths in sanitizer between uses. There are single-use tin cans in the walk-in cooler being used to store food. After opening, place the food in a food-safe container. Comment: the permit is paid. The bar permit is expired. A payment must be made within 48 hours to avoid excessive late fees and/or closure.
